Kovaikkai Chutney

Kovaikkai is the Tamil pronunciation of the vegetable which is known as “Tindora” or “Tinde” in Hindi.  I came across this recipe when I went to my cousin’s place and the dish was prepared along with complete South Indian meals by my aunt who is a super chef and a homemaker. Since having it for the first time, I am in madly love with the taste of it as the dish is a bit on the spicier side and we Indians always love spicy food. The chutney is actually served along with other dishes in South Indian meals and consumed along with steamed rice. Starting with the procedure, the following is the list of ingredients required to prepare the dish;




Ivy gourd(Tinde)                  200 gm

Onion                                        1 pcs

Green Chilly                           3-4 pcs

Ginger                                       1 pcs

Garlic                                        3-4 pods

Tamarind                                20 gm

Cooking oil                             4-5 tbsp

Mustard seeds                     1 tbsp

Salt                                            As per the taste

Curry leaves                        5-6 pcs



Step-1 Cut the ivy gourd in long thin strips and dice the onion into small pieces so that they can be ground later easily.


Step-2 Heat 2 tbsp of cooking oil in a pan. Chop small pieces of garlic, ginger, green chilly and add them in the pan.


Step-3 Stir fry for few minutes until garlic turns golden brown in color. Once done, add diced onion and ivy gourd in the pan along with a small piece of tamarind. Allow the vegetables to cook for some time without covering the pan with a lid.


Step-4 Allow the mixture to come at room temperature when it is cooked. When the mixture gets cooled, transfer it into the mixing bowl. After adding salt to it, grind the mixture with the help of a mixture grinder.


[Note:- While grinding, do not add any amount of water as it will make the paste too loose in consistency.]


Step-5 While grinding, simultaneously heat 2 tbsp of oil in a pan and once it gets heated, add curry leaves and mustard seeds. When the seeds get popped, add the prepared paste in the pan and allow it to cook for 5 minutes. Once it is done, your chutney is ready to be served along with steamed rice.

The making of pickle dates back to the year 2030 BC when people used to make cucumber pickle. It was initially made in order to store food for a long time and use it during the time of winter. Pickle was also the first option for the sailors and travelers who used to carry them during their voyage.

Dedicating the content to the lover of pickles, we will discuss two different pickle recipes which we can eat with flatbread, Thepla, etc.

  • Grape Pickle


  1. Green grapes 100 gm
  2. Achar masala 2-4 tbsp
  3. Powdered sugar 2 tbsp
  4. Oil 2 tbsp


Steps to follow:-

  1. Wash the grapes and dry them using a cloth.
  2. Once it is dried completely, add achar masala in a bowl along with the grapes and mix them well.
  3. Add powdered sugar and mix well. Later, add 2 tbsp of oil and allow it to rest for half an hour in a fridge.

The pickle is ready to be served and it should be consumed within a week as it cannot be stored for a longer time.

  • Chana Methi Pickle


  1. Chickpea 100 gm
  2. Fenugreek seeds 100 gm
  3. Achar masala 50 gm
  4. Oil 1 bowl
  5. Raw mango 1 Pcs

Steps to Follow:-

Step-1 Soak chickpea and fenugreek seeds separately in a bowl for a day.

Step-2 Take raw mango and cut them into pieces. Add salt and turmeric and allow it to rest for 5-6 hours.

Step-3 After a few hours, the water will start releasing from the mangoes. Use the water to soak chickpea and keep it in the water for one more day.

Step-4 Drain the water and spread the chickpea and fenugreek seeds on a dry cloth and allow it to soak up all the moisture from them.

Note:- Care should be taken that it should be dried below the sunlight or under a fan.

Step-5 Once they are dried completely, add achar masala, grated raw mango with the chickpea and seeds and stir them well.

Step-6 Heat the oil to its maximum temperature and allow it to cool till room temperature. Once cooled, add the oil to the mixture and mix them well.

Note:- Add Jaggery in the mixture if you want the pickle to be sweet.

Step-7 Allow the mixture to settle and keep it in a jar for a week and it will be ready to eat!

Vegetable Chimichanga

Any Mexican recipe whether it is burritos, tacos or any other dish, it always has a special place in the heart of all foodie people. Hence, dedicating to the foodies all across the globe, we are going to discuss another mouthwatering Mexican dish named chimichanga. The traditional dish is made with beef and cheese, but we are going to try it out with vegetables and replacing beef with the protein-rich pulse. Following are the number of ingredients which will be required to prepare the dish;


  1. Red kidney beans (Rajma)
  2. Corn
  3. Capsicum
  4. Onion
  5. Carrot
  6. Cheese (mozzarella as well as processed cheese)
  7. Tortillas sheets
  8. Butter
  9. Tacos seasoning(if available)
  10. Salt
  11. Black pepper powder
  12. Red chilly powder
  13. Olives and Jalapenos


All the vegetables are to be finely chopped in order to fill them in the tortillas.



Kick-starting with the recipe

Once you are ready with all the above ingredients, we can start with the proceedings.

Step:-1 In a pan, take 6-7 tbsp of oil and allow it to heat for sometime. Once it gets ready, add all chopped vegetables along with red baked kidney beans and stir them for a while.


Step:-2 Add tacos seasoning, salt to taste, red chilly powder, black pepper powder to the vegetables. Also, add diced olives and jalapenos and allow it to cook for 5 minutes till all the spices blend with the vegetables.


[Note:- There is no restriction on the number of vegetables to use. You can opt for any vegetable according to your choice. It will make your dish tastier than ever.]


Step:-3 Once the filling is ready, take a tortilla sheet and use one or two spoons of the prepared fillings as per your size of the sheet.


[Note:- If you don’t have readymade tortilla sheets, you can make a similar one by using all-purpose flour along with a pinch of salt and water as a binding agent. Make thick round circular sheets of the dough preparation and cook them slightly and tada! Homemade tortillas are ready to use]


Step:-4 Sprinkle the cheese from the top, wrap the sheet from the sides as shown in the picture below and shallow fry the tortillas in a pan. You can also cook them in the oven if you avoid consuming oily food. Once the tortillas turn into golden brown color, they are ready to serve.


Step:-5 Garnish them with coriander leaves and serve them along with salsa sauce or red bean curry and tomato sauce as per your wish and enjoy it with your family and friends! Nom nom.
